This Iberian ham is crafted from the 'Manchado de Jabugo' breed of Iberian pigs, which is classified as endangered, according to El Economista.
According to the Ministry of Agriculture, Food, and Environment, only 30 females (27 of which are breeders) and 17 males (7 breeders) are registered in the breed’s genealogical record. This rarity contributes to its astronomical price.
The ham is also certified as organic, with its production being much more labor-intensive than that of traditional hams. The pigs require more time to reach their ideal weight, and the hams undergo a longer curing process, which can last a minimum of 48 months.
Hams Selling for Thousands of Dollars
The company Ibericomio sells this exclusive Jabugo ham on its website for 4,962 euros (about $5,275) per piece, which weighs between 15.4 and 19.8 pounds. They indicate that the price does not include potential decorations. Customers have the option to receive the ham sliced or boneless.
This ham is 100% acorn-fed Iberian, sourced from free-range pigs raised in the dehesa of Cumbres Mayores in Huelva. Moreover, it is gluten-free, making it suitable for individuals with celiac disease.
While the typical price for Jabugo ham with the highest designation is around 5,000 euros, there are options available online for slightly lower prices, starting from about 4,100 euros (approximately $4,300). However, some hams can fetch even higher prices, particularly when exported to other countries.
In 2020, a Japanese television program showcased a Jabugo ham as the most expensive in the world, selling for around 12,000 euros (about $12,700). This 100% Iberian acorn-fed ham from Sierra Mayor Jabugo weighed 22 pounds and had been cured for over five years, earning the Guinness World Record for the most expensive ham sold at 1,429,000 yen (approximately $11,881).
