  • 3 tbsp soy sauce

Instructions

  1. Prep the veggies – Cut the broccoli into bite-sized florets, slice the leek into rings, and julienne the carrots and zucchini into thin strips.

  2. Rinse the konjac noodles under running water and let them drain. To reduce their distinct smell, blanch them briefly in hot water.

  3. Sauté the vegetables – Heat the coconut oil in a pan and stir-fry the broccoli for a few minutes. Add the leeks, carrots, and zucchini, cooking for another 5-7 minutes while stirring occasionally.

  4. Add the noodles – Toss in the konjac noodles and mix well with the vegetables so they heat through evenly.

  5. Make it saucy – Stir in the soy sauce and peanut butter until smooth and creamy. Let the dish simmer for another 2-3 minutes to allow the flavors to meld.

  6. Serve immediately and enjoy your delicious, low-calorie meal!
