Ingredients

  • 7 large onions
  • 700 g minced meat (any kind you prefer)
  • 1 cup cooked rice
  • 1 bell pepper, finely chopped
  • Fresh parsley, chopped
  • Salt and pepper to taste
  • 4 tbsp oil
  • 3 tbsp tomato paste
  • 2 cups water

Instructions

1. Prepare the onions: Cut the onions in half and place them in a large pot of salted water. Bring to a boil and let them simmer until soft. Once done, remove and let them cool.

2. Make the filling: In a bowl, mix the cooked rice, minced meat, chopped bell pepper, parsley, salt, and pepper. Stir until well combined.

3. Stuff the onions: Gently separate the onion layers once they’ve cooled. Fill each layer with a spoonful of the meat mixture and shape them back into onion “balls.”

4. Cook: Place the stuffed onions in a clean pot. In a separate bowl, mix the tomato paste with 2 cups of water and any remaining spices. Pour the sauce over the onions, cover, and let simmer over low heat for about 20 minutes.
