Made with juicy apples, fragrant cinnamon, and a light sponge from almond and coconut flour, this cake is a delightful addition to any coffee table this autumn and winter season.

According to Freundin, it's ideal for cozy afternoons or as a healthy snack.

Ingredients

  • 4 large eggs

  • 1 cup almond flour (100g)

  • 1/2 cup coconut flour (50g)

  • 1/2 cup birch sugar (or other low-carb sweetener) (100g)

  • 1 packet of baking powder (approx. 1 tablespoon)

  • 2 apples, peeled, cored, and sliced

  • 2 teaspoons cinnamon

  • 1 pinch of salt

  • 1 teaspoon lemon juice

  • 1/2 cup almond milk (or soy milk) (100 ml)

Instructions

  1. Prep the Pan and Oven: Grease a 9-inch (24 cm) springform pan or line it with baking paper. Preheat the oven to 350°F (180°C).

  2. Separate the Eggs: Separate the egg whites and yolks. Beat the egg whites with a pinch of salt until stiff peaks form.

  3. Prepare the Egg Yolk Mixture: In another bowl, mix the egg yolks with the birch sugar until creamy.

  4. Combine Dry Ingredients: In a separate bowl, mix together the almond flour, coconut flour, baking powder, and cinnamon.

  5. Make the Batter: Gradually fold the dry ingredients into the egg yolk mixture, alternating with the almond milk. Gently fold in the beaten egg whites.

  6. Prepare the Apples: Peel and core the apples, then cut them into thin slices. Drizzle with lemon juice to prevent browning.

  7. Assemble and Bake: Pour the batter into the springform pan and arrange the apple slices on top in a fan shape. Bake for 20-30 minutes or until a toothpick inserted in the center comes out clean.

  8. Cool and Serve: Remove the cake from the oven, let it cool, and enjoy your light, fluffy, low-carb apple sponge cake!

Tips

Toothpick Test: Oven times may vary, so keep an eye on the cake starting around 20 minutes. Insert a toothpick; if it comes out clean, the cake is done.

Alternative Sweeteners: Birch sugar can be swapped for other low-carb sweeteners like erythritol or monk fruit.

Enjoy this guilt-free treat for a cozy afternoon or a healthy snack!
