Baking cookies is a fun tradition in the lead-up to Christmas.
Many of us gather with family or friends, trying new recipes or sticking to those handed down through generations. But sometimes, cookie dough can turn out a bit too dense.
Here’s a secret ingredient to keep your Christmas cookies light and fluffy.
The key ingredient is: sparkling water!
According to an article in Freundin, adding a small amount of carbonated water makes cookie dough much fluffier. The carbon dioxide in the water creates small air bubbles, which help the dough rise better as it bakes, giving it a lighter, airier texture.
Recipe for Extra-Fluffy Christmas Cookies
Ingredients
½ banana
100 g coconut oil (approx. ½ cup)
50 g maple syrup (approx. 2 ½ tablespoons)
200 g wholemeal spelt flour (approx. 1 ⅔ cups)
1 teaspoon baking powder
1 teaspoon turmeric
1 pinch of cardamom
1 pinch of freshly grated nutmeg
1 pinch of salt
2 tablespoons mineral water (carbonated)
Light and dark sesame seeds for topping
Preparation
Preheat the oven to 175°C (350°F). Line two baking trays with parchment paper.
Peel the banana and blend it together with the coconut oil and maple syrup until smooth.
Add the spelt flour, baking powder, spices, and mineral water. Mix until you have a homogeneous dough.
Shape the dough into a roll, then divide it into 20 pieces. Roll each piece into a small ball, place them on the baking trays with space between each, and flatten them slightly with a fork.
Sprinkle sesame seeds over the cookies, and bake each tray for 10-15 minutes, or until the cookies are golden brown.
