Ingredients:
3 large potatoes
Oil
Salt
1 onion
Chili flakes
1 carrot
50 g sausage
75 g cheese

Preparation and Cooking:
Preheat the oven and prepare the potatoes: Preheat the oven to 200 degrees Celsius. Wash the potatoes thoroughly and dry them. Cut a cross in the top of each potato and rub them with oil and salt. Place the potatoes directly on the oven rack or on a baking tray and bake for about 1 hour, or until they are tender inside.
Prepare the filling: While the potatoes are baking, prepare the filling. Finely chop the onion and grate the carrot. Cut the sausage into small cubes. Heat a pan with a little oil and sauté the onion and carrot until they are soft. Add the sausage and chili flakes, and sauté for a few more minutes.
Fill the potatoes: When the potatoes are done baking, take them out of the oven and let them cool a bit. Use a spoon to gently open the cross at the top and mash the inside of the potato a little with a fork. Distribute the filling into the potatoes and sprinkle with grated cheese.
Gratinate the potatoes: Put the potatoes back in the oven for 5-10 minutes, until the cheese is melted and golden.
Serving:
Serve the stuffed potatoes hot, optionally with a fresh salad on the side.
