Late summer and fall are the perfect seasons for apples.

From applesauce to jelly, juice, and of course, the classic apple pie, this time of year brings plenty of sweet treats. But with all that deliciousness often comes a lot of sugar and whipped cream.

So, is there a way to enjoy the flavors of apple pie in a healthier way? One that’s higher in protein and lower in sugar?

This recipe for sweet apple and cottage cheese biscuits does just that—a tasty dessert with no guilt attached!

And while there's no shame in indulging in a piece of apple pie, a healthy alternative is always a good idea—especially when it’s as simple and delicious as this recipe!

Ingredients:

  • 7 oz (200 g) low-fat cottage cheese

  • 1 egg

  • 1 drop of vanilla extract

  • 2 teaspoons honey

  • 1/3 cup (about 1.75 oz or 50 g) flour (all-purpose, spelt, or whole wheat)

  • 1 large apple

  • Optional: a pinch of cinnamon

Instructions:

  1. Preheat the oven to 340°F (170°C) and line a baking sheet with parchment paper.

  2. In a bowl, mix the cottage cheese with the egg, vanilla, honey, and flour until a smooth dough forms. If the dough is too thick, stir in a few tablespoons of milk until it falls off the spoon slowly.

  3. Peel and core the apple, then cut it into thin slices. Gently fold the apple slices into the dough.

  4. Scoop the dough into small patties and place them on the baking sheet. Bake for about 15 minutes or until golden.

  5. Serve the apple biscuits warm, plain or topped with a sprinkle of cinnamon, a bit of powdered sugar, or some nut butter, according to your preference.
