58-Year-Old Woman Ate Only Boiled Corn for a Year: Surprised by High Blood Sugar Levels at Annual Health Check

Sometimes, you shouldn't take everything you read on the internet too literally. In this case, you can, as the story is genuine, but for 58-year-old Ms. Huo Fang from Jilin, China, she probably should have tried to find a bit more information.

According to Soha, the former elementary school teacher, who now works part-time, had randomly searched for how good corn was for one's health. Fortunately, the pages Ms. Huo Fang visited only had good things to say about corn, and since she loved corn, it seemed perfect.

She therefore decided to change her diet so that it would consist exclusively of boiled corn. This was for breakfast, lunch, and dinner.

After nearly a year on the corn diet, Ms. Huo Fang's son took her for a routine check-up at the doctor. The message there was not as expected.

The tests showed, among other things, that her blood sugar level was far higher than normal and higher than recommended. The 58-year-old didn't understand this at all, and when she told the doctor about her dietary habits, it was only then that she realized she probably shouldn't have done it.

The message from the doctor was clear:

"Although corn is rich in fiber, vitamins B1, B3, B6, iron, zinc and antioxidants, it also contains a lot of starch. Therefore, eating too much corn for a long time can increase blood sugar levels. In addition, Ms. Huo only eating corn and not eating other foods can lead to a deficiency of other important nutrients, causing serious health effects."

Ms. Huo Fang was very worried after the message and asked the doctor what she could do to get back on track.

The doctor told her that she could certainly eat corn, but it should be as a side dish. She was therefore advised to eat a varied diet with fruits and vegetables, beans, lean meat, and fish.

Ms. Huo Fang did as she was told, and two months later she showed up for a new health check.

This time, the test showed that her blood sugar levels were back to normal, and she expressed great gratitude towards the doctor who had helped her on the right path.
