March 25th isn’t just another Tuesday in March – it’s International Waffle Day, the perfect excuse to treat yourself to a batch of healthy waffles!
The day originally stems from Sweden, where “Spring Day” is also celebrated on March 25th.
Over time, the name of the religious holiday was misheard and morphed into “Waffle Day” – and just like that, a new tasty tradition was born.
Since then, the entire Nordic region has embraced the custom, with waffles now enjoyed in all varieties – topped with jam and whipped cream, or even cheese and ham.
But what if you want to join in without wrecking your calorie count?
No problem – here’s a healthy waffle recipe that’s still deliciously indulgent.
Recipe: Healthy Banana-Oat Waffles
Yields: 4 waffles
Ingredients
2 ripe bananas
2 eggs
1 dl oatmeal
1 dl oat milk (or other plant-based milk)
1 teaspoon baking powder
1 teaspoon vanilla powder (optional)
½ teaspoon cinnamon (optional)
A pinch of salt
Coconut oil or butter for the waffle iron
Instructions
Blend all ingredients in a blender or food processor until smooth.
Heat the waffle iron and brush it lightly with coconut oil or butter.
Pour in the batter and cook for 3–4 minutes, or until golden and crispy.
Serve immediately – ideally with fresh fruit, skyr, a drizzle of honey, or a spoonful of nut butter.
Tip: Want more protein? Add a tablespoon of protein powder to the batter. You can also sneak in extra greens by mixing in grated carrot or zucchini.
